Barbeque Ribs

3 pounds baby back ribs
1 ½ teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
1 cup of barbeque sauce*

Rinse ribs and pat dry. Rub dry ingredients on both sides of ribs.

On the grill:
Prepare the barbecue grill. Ribs should be cooked on medium high heat. Coals are ready when they turn white with an orange glow about 30 minutes. Place ribs on the grill rack. Turn ribs over, rotate and baste generously with barbeque sauce every 10 minutes until tender and browned about 40 minutes.

In the oven:
Put oven rack in middle position. Preheat oven to 400 degrees. Place ribs on a baking pan lined with heavy duty foil. Tent foil over baking sheet and tightly seal around edges of pan. Bake 1 ¼ hours. Remove ribs from oven and baste with barbeque sauce. Re-tent foil and return to oven for additional 30 minutes basting with sauce every 10 minutes.

3-4 Servings

BBQ Sauce

18 ounces tomato paste
1 tablespoon olive oil
2 cloves choppe garlic
½ cup chopped onion
3 chopped chipotle peppers in adobo sauce (in can)
1 cup dark brown sugar
1 teaspoon salt
½ cup orange juice
1 cup water

Add olive oil to medium sized sauce pan over medium high heat. Add garlic, onion, chipotle peppers and sauté 3 minutes.

Reduce heat to medium and add tomato paste, salt and brown sugar. Stir until brown sugar dissolves. Cover and simmer 10 minutes.

Add orange juice and water to the saucepan, stirring frequently. Simmer on medium low for 50 minutes, stirring periodically.

Yields 4 cups of sauce.
